Eggless Butter cookies with Chocolate topping

This is my first post on cookies and so I am starting with a basic butter cookie recipe. I have a food event this weekend where I am going to prepare several baked recipes. So I am starting with this simple delicacy πŸ™‚

Makes: 7 pieces

Preparation time: 10 mins

Baking time: 20 mins

Ingredients

Whole wheat flour/maida – ΒΌ cup

Corn flour – 1/8 cup

Sugar – 1/8 cup

Vanilla essence – 1 tsp

Butter – 1 tbsp

Baking powder – Β½ tsp

Milk – 3 tbsp (optional)

Chocolate spread

Chocolate flavored mix – 2 tbsp (I used bournvita, you may use dark chocolate/cocoa)

Butter – 1 tbsp

Milk – 2 tbsp

Sugar – 1 tbsp (Bournvita has some sugar)

Corn flour – 1 tbsp

Procedure:

  1. To make chocolate spread, heat butter, milk, sugar and chocolate in a saucepan.
  2. Add corn flour to this, let it thicken a bit and remove from heat. Make sure the chocolate doesn’t burn. Let it cool.
  3. For the cookies, sift together the flours and baking powder.
  4. In a separate bowl, beat the butter and sugar till it mixes well. Add the vanilla to this.
  5. Into this add the flour mixture a spoon at a time and mix gently. If the dough is too dry, add some milk.
  6. Prepare small balls out of the dough and flatten each ball slightly.
  7. Place them on a greased baking tray and bake in a pre-heated oven at 160Β°C for about 20-25 mins until golden brown.
  8. Remove from oven, let them cool.
  9. Spread the chocolate topping and add a cranberry/cherry on each. Have them with coffee or tea.
