Stuffed Buns/Bread

I was planning to make stuffed masala buns from a very long time now, but I do not know why I haven’t until now πŸ™‚ I am personally a lover of stuffed foods, be it puffs, rolls, wraps, buns, breads whatever… I love stuffed foods a lot. So, when I saw this recipe online I really wanted to give it a try, but I din’t want to use whole wheat flour in this recipe and the reason is because I wanted to try the original and actual stuffed bun recipe. Since I am using all-purpose flour in this recipe I added some flax powder and soy, oats in my stuffing to increase its nutritional value.

Stuffed buns are easy to prepare, doesn’t need much effort. Just make your favorite stuffing ready and you will have a yummy food ready. You may eat this like a snack or for a light dinner.

Makes: 4 medium-size buns

Preparation time: 1.5 hours

Baking time: 15-20 mins

For Dough

Pizza dough – Check my recipe here (Use same measurements as in the recipe)

Flaxseed powder – 2 tbsp (optional)

Dry Italian herbs – 1 tsp (optional, I used dried basil, dried oregano, garlic powder)

Milk – 1 tbsp (for brushing the buns)

For Stuffing

Soy chunks – ΒΌ cup (soaked in water for 15 mins)

Oats – 3 tbsp (regular or masala flavored)

Cabbage, carrots, capsicum, onion – ΒΌ cup each (shredded or finely chopped)

Green peas, corn kernels, baby corn, beans – 2 tbsp each

Green chili – 2 (slit lengthwise)

Ginger – 1 tsp (finely chopped)

Turmeric powder – Β½ tsp

Cumin powder – 1 tsp

Coriander powder – 1.5 tsp

Chana masala powder – 1 tsp (optional)

Oil – 1 tsp

Salt – to taste

Procedure:

  1. In my pizza dough, I used 1.5 cups of all-purpose flour instead of wheat flour and so to make it healthier I added flaxseed powder with a seasoning of Italian herbs. You may skip adding these and prepare the regular dough.
  2. Take the soaked soy chunks in a blender and grind it to a coarse thread mixture. Do not make into a paste. It should be dry and thread kind-of. Keep it aside.IMG_4735
  3. To prepare the stuffing, heat oil in a pan and add the green chili, ginger and onions. Fry for a minute.
  4. Add the blended soy chunks, oats and all the vegetables. Give a good mix and add salt to taste. Cook covered till the carrots are halfway cooked.
  5. Add all the spice powders – turmeric, cumin, coriander and chana masala and give a good mix. Let it cook for another minute and remove from heat. Let cool completely.IMG_4737
  6. To make the buns, separate the pizza dough into 4 equal-sized balls.
  7. Taking one ball at a time, flatten it out a bit and place about ΒΌ cup of the prepared stuffing. Do not overcrowd the stuffing, you should be able to seal the mixture completely.
  8. Carefully seal the entire stuffing with the edges of the dough and make a perfect round ball. Make all 4 balls this way and place them on a greased baking tray. Cover with a thick kitchen cloth and let them rise for about 30 minutes.
  9. In the meanwhile pre-heat oven to 200Β°C.
  10. Once the balls have risen, brush the tops with milk and bake them in the oven for 15-20 minutes or until they turn into golden color.
  11. Let them cool and serve them with ketchup, salsa or sour cream on the side.

Note:

  1. Make sure that the stuffing is cooked completely dry or else when it bakes the buns become soggy.
  2. You may use butter or oil while kneading the dough, this will make the bun very flaky.
