Vegetable Sandwich

 

 

 

 

 

 

This is a very healthy sandwich made with a whole lot of vegetables and the best thing about this recipe is we can add any vegetable of our liking to make the patty. The crunch of the cabbage along with the soft bread and the mustard really tickles your palate for more πŸ™‚

Serves:Β 2 Cooking time:Β 30 mins

Ingredients:

For veggie patty
Beetroot – Β½ cup (grated)
Carrot – Β½ cup (grated)
Mutter/peas – ΒΌ cup (frozen)
Corn kernels – ΒΌ cup (frozen)
Bread crumbs – Β½ cup
Coriander leaves – ΒΌ cup (finely chopped)
Garam masala powder – 1 tbsp
Chat masala powder – 1 tsp
Cumin/jeera powder – 1 tsp
Red chilli powder – 1 tbsp
Lemon juice – 1 tsp
Salt – to taste
Oil – 2 tbsp

For green paste
Coriander leaves – 1 cup (roughly chopped)
Green chilli – 2 (roughly chopped)
Curd – 1 tbsp
Salt – to taste

For salad
Cabbage – 1 cup (shredded)
Capsicum – Β½ cup (cut into long thin strips)
Salt – to taste
Oil – 1 tsp
Pepper – 1 tsp

Other
Sandwich bread/buns – 4
Ghee/butter – 1 tbsp
Mustard paste – Β½ cup

Procedure:

To make green paste

Mixall the ingredients under β€˜for green paste’ and blend it into a smooth paste. Add some water if needed.

To make salad

  1. Heat oil in a pan and stir fry the cabbage and capsicum for about 2-3 minutes until cabbage is slightly cooked, but remains crunchy.
  2. Remove from heat and add salt and pepper. Keep aside.

To make veggie patty

  1. Blend the peas and corn into a coarse paste and mix it along with all the ingredients under β€˜for veggie patty’.
  2. Shape it into long thick patties depending on the size of your sandwich bread.
  3. Heat oil in apan and fry the patties on all sides till nice and golden.
  4. Remove from heat and keep aside.

To assemble

  1. Heat ghee/butter in a pan and toast the sandwich bread/buns on both sides.
  2. Take the lower half of the sandwich bread and apply the green paste over it.
  3. Place the salad over the paste and put the patty over the salad.
  4. To the upper half of the sandwich bread, apply mustard paste on one side of it.
  5. Place this upper half on the lower half such that the mustard paste is over the patty.
  6. Serve with fries and a cool beverage.

Variations:

You may add some chopped vegetables like carrots and cucumber to top the patty.
