green beans masala | best and easy Indian style curry recipe | with roti, sambar rice, rasam – this is how I make my green beans fry with everyday thali (meals). We make our usual thali with dal(pappu)/sambar, rasam, plain white rice and curd/yogurt along with curry(sabzi). I love this version of green beans masala because its very easy, takes very little time and tastes amazing.
I made this recipe to some of our friends last week for a small get together. It’s summer here in Canada now, where we live. So, I packed some picnic stuff and went to a nearby bike trail and park. I prepared this green beans masala fry along with sambar rice, appadam(papadam), curd rice(daddojanam) and of course some picnic goodies for the kids! It was a fun weekend and this curry was so good that we also ate it as a snack by itself.
twist to regular poriyal
We make green beans curry atleast once a week. Being a south Indian, I often prepare it in Andhra or south Indian style. Which means, I add coconut or basic south Indian spices. Many south Indians cook green beans poriyal on a regular basis. We pair it with kootu(dal based side dish), sambar, any dal and rasam. In our family, we do not prepare poriyals as much, we eat coconut in moderation. But, when I do prepare any curry with coconut, I love trying different versions of the same recipe. Previously, I shared my beetroot poriyal recipe, which is beetroot curry with freshly grated coconut. I make poriyal with many different vegetables – carrots, tindora(dondakaya), chow chow(chayote), green beans, long beans, snake gourd(potlakaya), ridge gourd(beerakaya) etc. If you are bored of this version, try my current recipe which is a simple twist to your regular poriyal.

what’s different in this recipe?
If you love coconut, you will love this recipe. That’s right! I make this with freshly grated coconut – roasted with garlic, cumin seeds and other Indian spices. This curry comes together very quickly and once you make it, you will forget your regular poriyal. I guarantee you this!
I prefer making curries like this in cast iron pans/skillets or in non-stick pans. This will ensure the vegetable fries well first instead of steaming or cooking through. Any Indian style fry or curry that I make with potato, okra, tindora etc – I prefer using cast iron pans.
healthy side-dish with roti & rice
As much I love vegetables, I am glad they are rich in nutrients. Green beans is extremely healthy to our bodies. I am a PCOD/pre-diabetic person and I always add fiber in my diet. Vegetables is a huge part of my daily diet – as they have lots of fiber, calcium, potassium, manganese etc. Any green vegetable is nutritious for our eyes, body, skin and stomach. They help in easy digestion, keeps full for a long time and low on calories and carbs. Vegetables are a win win!

Ingredients
- for masala powder
whole dry red chili – 3
cumin seeds – 2 tsp
coconut, grated – 1/4 cup
garlic cloves, peeled – 3 big (or 7 small)
oil – 2 tsp
salt – for masala
- to make curry
green beans, cut into long pieces – 4 cups
oil – 2 tbsp
mustard seeds – 1/2 tsp
curry leaves – few
whole red dry chili – 2
hing, asafoetida – pinch (optional)
salt – to taste
Directions
- to prepare masala powder
- Heat a pan on medium low heat with oil. Add the whole dry red chili and cumin seeds. Let it roast till cumin seeds leave a nice aroma.
- Add the garlic and fry till garlic turns into light golden brown color.
- Then, add the coconut. Fry till coconut turns into light golden color. Remove from heat and let it cool.
- Once cool, add to a blender jar with enough salt. Grind to a coarse mixture. DO NOT ADD WATER. Masala powder is ready. Set aside!
- to prepare green beans masala fry
- In a pan on medium low heat, add oil.
- Once hot, add the mustard seeds. Once they crackle, add the whole dry red chili, curry leaves and hing. Fry for a minute.
- Then, add the fresh green beans and enough salt. Cover with lid and cook on medium low heat. Keep checking the vegetable in between while stirring it. Do this till vegetable is fully cooked.
- Finally, add the prepared masala powder and give a good mix. Cook it for 2 more minutes without placing lid/cover.
- Serve hot or warm with rice or roti.
Notes
- do not add water to the prepared coconut masala powder
- garlic is recommended in this recipe
