Cheesy Garlic Bread Sticks

I believe every food blogger has some specific recipes that pose a big challenge to them. There will be certain recipes where, how much we try to perfect it, it never really comes out good. For me, this is that special recipe πŸ™‚ I do not know how many times I tried this earlier, but it never came out perfect. Either the dough wouldn’t be great or the crust would be soft and soggy.

But now, I am really glad to share this recipe with you all. I made this last friday and it turned out sooper delicious!! The crust was splendid, it had the perfect crunch with the cheese melted beneath it and the spice mix was just right with all the Italian flavors. The same recipe can be made entirely with all-purpose flour, if you want to.

Makes:Β 8

Dough rising time: 1.5 hours

Preparation time: 30 mins

Baking time:Β 10-12 mins

Ingredients:

Whole wheat flour – Β½ cup

All-purpose flour/maida – Β½ cup

Active dry yeast – 1 tsp

Sugar – a pinch

Water – Β½ cup

Buttermilk/curd – 2 tbsp

Salt – Β½ tsp

Cheese, grated – Β½ cup (I used mozzarella)

Coriander leaves/parsley – 1 tbsp (very finely chopped)

Oil spray/oil/butter – 2 tbsp

Garlic powder – Β½ tsp, optional

For spice mix (mix all ingredients together, you may add or subtract ingredients depending on their availability)

Garlic powder – Β½ tsp

Pepper powder – Β½ tsp

Salt – ΒΌ tsp

Mixed herbs (oregano, basil, thyme,rosemary) – 1 tsp

Red chili flakes – Β½ tsp

Dry mango powder/amchur – Β½ tsp

Preparing the dough:

  1. Microwave/heat the water until it is just warm. It should not be hot as this will kill the yeast. When you place your finger in the water the heat should be bearable.
  2. Add the dry yeast and sugar to the water, combine well and leave aside for about 10 minutes.
  3. After 10 minutes the yeast will activate and will become creamy kind-of.
  4. In a large mixing bowl, combine all purpose flour, whole wheat flour, salt, garlic powder, 1 tbsp of oil, curd and give a good mix.
  5. Adding the yeast liquid a portion at a time to the flour, knead it into smooth and soft dough. Add water if needed.
  6. Take a vessel, spray oil in it and place the dough in it.
  7. Spray oil on the dough as well and cover it with a damp cloth.
  8. Cover it with an air-tight lid and let it rest in a warm place for about 1-1.5 hours.
  9. After 1.5 hours, the dough would have doubled in volume.

For bread sticks:

  1. Transfer the risen dough onto your work surface, dust it with flour and roll it to a Β½ inch thick roti/chapati.
  2. Spray oil on it, spread a layer of cheese on one semi-circle or on one half of the dough and sprinkle the spice mix on the cheese.

  4. Fold the other half of the dough over the spiced cheese and brush it with milk/butter/oil. Sprinkle the remaining cheese, spice mix and coriander leaves on the folded dough.

  6. Place this on a greased baking tray and bake in a pre-heated oven at 220Β°C for 10-12 minutes or until the cheese has melted and the dough turns into light golden brown.
  7. Serve hot as a side to your pizza or burger.

  1. hi yummy receipe. cn u pls tell me hw can i use my microwave of morphyrichards whc has option of MICRO+CONVECTIIN. IT IS NOT JUST CONVECTION BT MICRO+CONVECTION. so i really dont knw wat utensil vessel shd i place in it. i was gvn a stainless steel rack j guess dats fo grillin . den j got a large round pan kind of a tray in black color.nw i donno wag materal ut is. once i used microwav safe bowl in micro plus convection mode bciz of whc my bowl meltd.so nw i really donno .pls help me.
