potato is probably the most common household vegetable we all love to cook and eat. Be it curry or stew or paratha, we love to enjoy it in every possible way. As a bachelor, I remember buying potatoes everytime I go to the grocery store as its one of the easiest vegetable to cook with. Not to forget, its got a fairly quick cooking time and the enormous amount of recipes that we can make with potato is just amazing 🙂 Make this Indian style potato fry and pair it with a bowl of warm rice for a satisfying meal!

The boys in my home love a basic potato fry made with salt, turmeric and chili powder- that’s all, nothing else! Serve this with a hot bowl of rice and everyone’s happy 😀
Agreed, potatoes are high on carbs, but, they also have a good amount of iron, fiber and not to forget the other nutrients that our body needs. Also, potatoes are very healthy for kids. It may not be diabetic friendly, however, we do cook and eat it as moderation is key 🙂
This Indian style potato fry is kid friendly, bachelor friendly, roomie friendly and friendly to anybody who loves potatoes 😛
INGREDIENTS
- potatoes/aloo – 6, medium
- oil – 1/4 cup
- turmeric powder – 1 tsp
- red chili powder – 1 tbsp
- salt – to taste
PROCEDURE
- Peel the potatoes and dice them into tiny pieces
- Heat a pan on medium to low heat, once hot add the oil
- Add the turmeric powder and after few seconds, throw in the potato pieces
- Mix well and let it fry on low-medium heat for a good 20-30mins while stirring in between. This ensures even cooking and gives a nice nutty texture and taste to the curry
- Add in the salt and red chili powder- ensure the vegetable is 70% cooked at this stage
- Mix well and fry for another 5 mins on low heat
- Remember to not cover the curry at any stage of this recipe- covering it will ruin the crispiness of the curry
- Remove from heat and serve with hot rice with a spoon of ghee! Yum!!
