Come winter and I opt for soups, they are very healthy definitely but also they are easy to make during these cozy and lazy winter nights. So, if I have to make soup then I definitely also make salad. Salads are very healthy and at the same time are best because we can mix anything and just dress it with a simple dressing or if nothing, even salt and pepper works fine.
Oranges are in season now, so I made a quick orange and cucumber salad with a basic honey lemon dressing. I added some nuts for a crunch and texture and it went well with a hot carrot soup 🙂 So, check out the recipe and make it sometime soon 🙂

Ingredients:
Orange – 1, big/medium (peeled, remove the white bitter part and seeds from each one)
Cucumber – 1, small (peeled and cut into bite-size pieces)
Onion – 1, small (cut into thin pieces)
Mint leaves – About 10 leaves (roughly chopped)
Salt – to taste
Pepper powder – a pinch
Sesame seeds – to garnish, optional
Honey-Lemon Dressing (Combine all the ingredients and refrigerate until use)
Oil – 1 tsp
Lemon juice – ½ tsp
Honey – 1 tsp
Salt – to taste
Nuts (Dry roasted and roughly chopped)
Almonds – 2
Peanuts/groundnuts – 5
Procedure:
- In a mixing bowl, combine the orange, cucumber, onion, mint leaves, salt and pepper. Add the honey-lemon dressing to this and give a good gentle mix.
- Serve onto a serving bowl or plate and drizzle the roasted nuts and sesame seeds.
- Serve either warm or cold.
We are heading to NZ soon. Whenever we go on roadtrips, we usually have salads for dinner. This is such a great idea <3
