No bake no cook Swiss roll cake/cookie is exactly what it says – no need to bake or cook, it gets ready in 10 minutes and is super easy. Needs only a few ingredients that are readily available in your kitchen. This is very good as a quick snack, is toddler and kid friendly, can be stored in the refrigerator too!
I have an authentic Swiss roll cake on my website which I prepared with Jam filling. But, today I share with you my easy peasy no nonsense recipe for a super duper quick dessert/snack and is also healthier compared to the regular traditional swiss roll cake.
Today, I share with you my 10 minute recipe for peanut butter filled Swiss roll cake/cookie. I say cookie because the base is not a regular cake or sponge but is made with tea biscuits or any other biscuits of your choice. Here, I have used a combination of digestive and oreo cookies to prepare my base. I used peanut butter filling as my son loves it to snack on. You can use any filling of your choice – jam, marmalades, nutella, grated coconut or any other that you prefer.

INGREDIENTS–
Biscuits of your liking – 8-10 (I used digestive and oreos)
Sugar – 1 tbsp, optional
Butter – 2 tsp
Milk – 2 to 3 spoons
Filling of your liking – peanut butter or jam, 5 tbsp
PROCEDURE–
STEP 1 — Take the biscuits, sugar, half the butter, milk in a blender
STEP 2 — Blend to a coarse mixture, transfer to a bowl
STEP 3 — Knead into a dough
STEP 4 — Take a parchment paper and grease with butter
STEP 5 — Place the dough on it
STEP 6 — Roll the dough into a rectangular sheet with thickness of your choice
STEP 7 — Apply peanut butter over it evenly
STEP 8 — From one end of the sheet, roll it gently to other end by tucking the roll tightly
STEP 9 — Wrap it up and place in freezer for atleast 30 minutes (1 hour preferable)
STEP 10 — Cut into pieces and serve
