Pie is a baked dish that can be prepared either sweet or savory. It is made with a pastry dough that is filled with a stuffing of various types. The pie crust is made traditionally with all-purpose flour/maida and lots of butter. To avoid that, in my recipe I have used whole wheat flour and some oil. This recipe is a sweet pie and I used strawberry filling for this. But you can do this with blueberries, pineapples, apples or even fruit jam.

For pie crust:
Whole wheat/multi-grain flour/all-purpose flour – 1 cup (I used whole-wheat)
Butter (unsalted)/Oil – 3 tsp
Salt – 1 tsp (or use salted butter without the salt)
Sugar – 1 tbsp (Powdered)
Vanilla extract – ¼ tsp, optional
Baking powder – ½ tsp
Buttermilk/water – enough to form dough
For strawberry filling:
Strawberries – 8-10 (cut into small pieces)
Honey – 1 tbsp
Orange rind/zest – ½ tsp, optional
Corn flour/starch – 2 tbsp
Other:
Semolina/suji – 1 tbsp, for dusting the baking bowls
Oil/butter – 1 tsp, for greasing the baking bowls
Cookie cutters/small round katori/plate – for cutting the pie crust
Milk/oil/butter – for brushing the pie
Procedure:
- Combine all the ingredients under ‘for pie crust’ and form dough. The dough should be slightly dry and not wet like Indian roti/chapati dough. Cover with a cloth and set aside.
- In a mixing bowl, combine all the ingredients under ‘for strawberry filling’ and set aside.
- Take 2 small oven-safe bowls/katoris and grease them with oil/butter. Sprinkle little semolina/suji so that the dough wouldn’t stick to it. Set aside.
- Spread some flour on your work surface and roll out the dough into ½ inch thickness. Using a cookie cutter/katori, cut the dough into 2 equal round circles such that their size is bigger than the mouth of your greased bowls/katori. This is because the dough should cover the greased bowls entirely from the inside.
- Using a smaller cookie cutter/katori cut 2 more circles. This is to cover the mouth of the greased bowls.
- Take one greased bowl and place one bigger pie crust circle in it. With a gentle hand, make sure the crust covers the sides of the bowl.
- Place half the strawberry filling in it. Cover it with the smaller pie crust circle. Brush it with milk/oil. Repeat the same for other pie too.
- Bake them in a pre-heated oven at 200°C for 15-20 minutes or until they turn golden brown.
- Remove from oven and let them cool for a while. Serve warm/cold.
Note:
- You can use a muffin mould or cupcake mould to bake individual pieces.
- You may be creative and cut the top pie crust into any shapes you prefer. I just cut it into star shape.
- Make sure the strawberry filling is not very wet because that will make the pie soggy.
