‘Tofu’ is like paneer but made from soy milk. It is good in protein and a good healthy vegetarian option to use in koftas, starter recipes and gravy curries.

Today’s recipe is an appetizer or can be had as a snack too. It can be made quickly whenever your kids come from school or when you need something for unexpected guests.

Ingredients
Firm Tofu – ¼ cup (crumbled, I used Chetran’s tofu)
Onion – 1 small (finely chopped)
Aloo or potato – 1 small (boiled, peeled and mashed)
Mutter or green peas – 1/8 cup (boiled)
Green chili – 1 (very finely chopped)
Coriander or dhania powder – 1 tsp
Dry mango powder or amchur – 1 tsp
Cumin or jeera powder – ½ tsp
Coriander leaves – 2 tbsp
Vinegar or lemon juice – few drops
Salt – to taste
Water – 2 or 3 tbsp (to be able to shape into koftas)
Oil – to shallow fry
Procedure:
- Into a large mixing bowl, add all the ingredients except water and oil. Combine well.
- Prepare kofta shaped balls from the mixture; add 1 or 2 tbsp water if the mixture is too dry.
- Heat the oil for shallow fry and on a medium-low flame; fry the koftas till they are crisp and deep golden brown in color.
- Squeeze a little of lemon juice over them and serve hot with ketchup or green chutney.
