Paneer bhurji is a classic Indian curry that is very popular with roti, paratha and naan. It is a very famous Indian street food or also known as dhaba style sabzi. Today, I share with you my version of the very famous dhaba style paneer bhurji that I love to prepare with phulka for dinner!
In my home, we prefer roti or phulka for dinner. Since, I am on PCOS/PCOD diet for most of the days, I like to skip rice for dinners. I recently mastered making phulkas 😀 I was never very good at preparing those perfectly puffed up round phulka. So, I used to resort to making chapati or roti that I do on a flat pan or tawa. But once I learnt the knack of preparing phulkas, I am rarely cooking roti these days. Phulka feels light on stomach, not greasy or oily and best part is takes less time to cook compared to roti 🙂
One small variation that I love to make with phulka is that I add 2 tsp of ground flax seed powder to my wheat flour. This is completely optional. I only do this to aid in PCOS/PCOD diet so that I can sneak in some fiber into my body.
Enough said! Now, lets get back to the recipe 😛 A lot of us are aware that paneer bhurji is a very popular street food curry in India. Due to this lockdown situations everywhere, its become difficult to find street food these days. So, most of us are trying to prepare chaat and street foods at home to satisfy our cravings. That is exactly what I am doing too! I prepared this dhaba style paneer bhurji for dinner yesterday with phulka and some regular cucumber salad. My family loved it. So, here’s the recipe for you all.
I used freshly prepared homemade paneer in this recipe. The bhurji tastes good with fresh paneer instead of using scrambled or grated paneer blocks. The recipe for fresh homemade paneer is here.

Paneer Bhurji recipe| dhaba style

Ingredients
Paneer, cottage cheese – 1 cup, grated or fresh
Besan, gram flour – 2 tbsp
Onion – 1 small, finely chopped
Tomato – 1 big, finely chopped
Ginger garlic paste – 1 tbsp
Bay leaf – 1
Red chili powder – 2 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tbsp
Dry fenugreek leaves, kasoori methi – 1 tsp
Green chili – 2
Hing, asafoetida – a pinch
Jeera, cumin seeds – 1 tsp
Garam masala powder – 1 tsp
Coriander leaves – to garnish
Salt -as needed
Oil – 2 tbsp
Directions
- Heat a pan with 1 tbsp oil.
- Add the besan and fry for 2-3 minutes on very low heat. Besan starts turning darker and leaves a nice aroma. Switch off the flame and remove into a bowl. To this bowl, add turmeric powder, red chili powder, kasoori methi, coriander powder, garam masala powder. MIx well and set aside
- Heat the same pan and add remaining oil.
- Add bayleaves and cumin seeds, hing. Fry for a minute
- Add the onions and ginger garlic paste. Fry till onions turn translucent
- Add the tomatoes and cook covered till its completely cooked
- Add the needed salt and the prepared besan mixture
- Fry for a minute and add about 2 cups water to get a good gravy consistency
- Besan keeps taking water before reaching to a gravy consistency that you desire. So keep adding water in batches till you get the desired consistency
- Adjust salt, add the green chili and cook covered for a minute
- Finally add the paneer, mix well and simmer for a minute
- Remove from heat and garnish with coriander leaves!
