Beetroot is a very healthy vegetable that should be part of our regular diet. Somehow in my home, no one really likes it and usually I prepare beetroot halwa whenever I buy beetroots. My husband loves this sweet and we generally do not prefer it eating in the form of curry in my home – main reason being it brings a slightly sweet taste to the dish. Due to this, I don’t usually buy them but I always want to include as much fresh vegetables as possible in my diet.
Recently, I saw this pulao preparation by a Youtuber – Neelam in her channel and I really liked this idea of incorporating goodness of beetroot in pulao that everyone loves to eat.
Ingredients
Beetroot, grated – 1 big
Onion, finely chopped – 1 medium
Garlic,paste – 1 tbsp
Bay leaf – 1
Cloves – 2
Cinnamon, piece – 1 small
Oil – 2 tbsp
Ghee – 1 tsp, optional
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tsp
Rice, soaked – 2 cups
Cumin seeds, jeera – 1tsp
Salt – as needed
Procedure
- Heat a pan with oil/ghee
- Add the cumin seeds, bay leaf, cloves, cinnamon
- Once they release their aroma, add the onions
- Fry the onions till they turn light brown
- Add garlic and fry
- Add the turmeric, red chili powder, coriander powder. Fry for a minute
- Add the beetroot and fry for about 5 mins till the raw smell disappears
- Add the drained rice and fry for a good 2 minutes
- Add enough water, salt as needed and cook the rice either in pressure cooker or directly on stove until well done.
- Serve with a spicy gravy like mirchi ka salan! I love it this way.
