Eggless Black Forest Cake

This is the first time I made this cake for a food sale in our apartment complex and it was a huge hit. All kids loved it a lot and it was sold in less than 15 minutes. I actually googled a lot for the perfect and simplest recipe and arrived at the below recipe. I really hope you would enjoy it as much as I did 🙂

The authentic version of the cake is topped with cherries but it was unavailable and hence I topped it with strawberry icing and leftover sponge pieces from the cake.

Makes: 12 pieces

Preparation time: Overnight

Baking time: 30-45 mins

For cake

All-purpose flour/maida – 1 ¼ cup

Cocoa powder – ¼ cup

Powdered sugar – 1 ¼ cup

Vanilla essence – 1 tsp

Butter – 1/2 cup (At room temperature)

Baking powder – 1 tsp

Buttermilk – 1 ¼ cup

For frosting

Vanilla frosting/icing – 1 cup (I used store-bought)

Diary milk/chocolate bar – 30 gms (To make the shavings)

Cherries – 10 (I couldn’t use them so instead topped the cake with icing itself)

For sugar syrup

Sugar – ½ cup

Water – ¼ cup

Procedure:

Preparing cake

  1. Pre-heat oven to 180°C. Grease a cake tin with butter and sprinkle some plain flour all over it. Place aside.
  2. Take the butter and sugar in a bowl and beat it together till a nice creamy mixture is formed.
  3. Add the vanilla essence and buttermilk and mix well. A thick creamy batter forms.
  4. Into this, sift the all-purpose flour, baking powder and cocoa powder and incorporate all the ingredients well. Make sure everything is combined well.
  5. Pour this into the greased cake tin and bake at 180°C for 30-45 mins till an inserted toothpick comes out clean.
  6. Let it cool and place in the refrigerator for about 3 hours or overnight.

Preparing syrup

To prepare the syrup, heat a pan and add sugar and water. Let it simmer till the syrup thickens slightly. Place it aside.

Assembling the cake

  1. Remove the cake from refrigerator and cut horizontally into 2 parts.
  2. Place the lower half of the cake on an inverted plate or a turn table if you have one.
  3. Spread some sugar syrup on the top-side of the lower half of the cake.
  4. Spread about ¼ cup of vanilla frosting all over it.
  5. Place the upper half of the cake over this and spread some sugar syrup over this as well.
  6. Spread about ½ cup of frosting all over it. Also apply frosting all around the sides of the cake with the remaining ¼ cup of frosting. You may add frosting as much as you like to.
  7. Grate the chocolate bar to get chocolate shavings. Sprinkle them all over the cake and gently apply them all through the sides as well by using your fingers to coat the cake while rotating the cake.
  8. Finally garnish with cherries or you may be creative and make any designs on your cake.
  9. Black forest cake is ready to surprise your loved ones.
