Ingredients:
Potato – 1 Large
All purpose flour (Maida) – ¼ – ½ cup
Salt – 1 tsp
Pepper powder – ½ tsp (optional)
Pasta Sauce – 2 cups
Procedure:
- Boil, peel and mash the potato.
- Use a fork to mash the potatoes. This will make the potatoes fluffy. You can also grate the potatoes into thin strips.
- Leave the potatoes in the refrigerator overnight. This will help the potatoes to loose water.
- To this mashed potato, add flour and water 1 tbsp at a time and mix well.
- Mix till it is able to form and hold its shape. It should feel like children’s play dough.
- Make them into small bite size balls and make an impression on them with a fork.
- In a deep dish, boil some water with a pinch of salt and a few drops of olive oil.
- Drop the pasta balls into the boiling water. Make sure they don’t stick to each other or the walls.
- The gnocchi will rise in a couple of minutes. This is an indication that they are cooked.
- Cook all the gnocchi and transfer them to serving plates.
- Pour fresh pasta sauce on them and serve hot.
