Gnocchi in pasta sauce

Serves: 2 Cooking time: 45 minsPreparation time: Overnight

Ingredients:
Potato – 1 Large
All purpose flour (Maida) – ¼ – ½ cup
Salt – 1 tsp
Pepper powder – ½ tsp (optional)
Pasta Sauce – 2 cups

Procedure:

  1. Boil, peel and mash the potato.
  2. Use a fork to mash the potatoes. This will make the potatoes fluffy. You can also grate the potatoes into thin strips.
  3. Leave the potatoes in the refrigerator overnight. This will help the potatoes to loose water.
  4. To this mashed potato, add flour and water 1 tbsp at a time and mix well.
  5. Mix till it is able to form and hold its shape. It should feel like children’s play dough.
  6. Make them into small bite size balls and make an impression on them with a fork.
  7. In a deep dish, boil some water with a  pinch of salt and a few drops of olive oil.
  8. Drop the pasta balls into the boiling water. Make sure they don’t stick to each other or the walls.
  9. The gnocchi will rise in a couple of minutes. This is an indication that they are cooked.
  10. Cook all the gnocchi and transfer them to serving plates.
  11. Pour fresh pasta sauce on them and serve hot.
